Real bagels follow traditions that age back to earlier times. Olde Hearth bagels are real bagels – kettle-boiled and hearth-baked in the old bagel tradition. We use all premium ingredients, yet maintain a strong competitive position within the industry. Old Hearth bagels are prepared with a traditional egg based formulas, to produce an outstanding texture, unlike any other refrigerated bagels on the market. Once the dough is made, the ingredients need time to be absorbed and flavors transferred uniformly throughout the dough. By controlling both the temperature and the humidity over time, up to eight hours on your bagel, the flavors have the chance to blend and become uniform throughout each bagel. This results in one of the strongest flavor profiles in the industry. |

Traditional bagels are water boiled by submersion in a kettle to insure that the interior is soft while the crust is firm and chewy. We only use water boiling to insure the differentiation between the interior and crust is just right. The baking process gives the product the color and sheen that is characteristic of a traditional bagel. Olde Hearth brand bagel’s uses a traditional hearth plate oven. This allows additional heat to be applied to the top of the bagel and controlled heat to be added to the bottom. The color is more uniform in a hearth oven and the finish product is superior when used in conjunction with water boiling.
