Berry Lemon Scones
Instructions
Heat oven to 375 F.
In large bowl combine flour, baking powder, baking soda, and salt. Add butter.
Using a pastry blender or fork or two knives, cut butter into flour mixture until mixture looks like small pebbles.
Add 3 tablespoons sugar and 1 teaspoon lemon zest. With fork mix well.
In 1-cup glass measure place buttermilk and egg yolk; mix well.
Add buttermilk mixture to flour mixture. With fork mix until mixture forms a soft dough (may be slightly sticky).
Add dried berries; mix with fork until well combined
(1 minute)..
Turn dough out onto flour dusted cutting board. Turn dough over 4 or 5 times to form into a ball. If necessary add a little more flour so dough doesn’t stick to board.
Cut ball into 4 equal pieces. Pat each piece into a 5-inch circle. Cut each circle into 6 equal triangles.
Place triangles onto a parchment lined cookie sheet in the shape of the cut circles. Brush tops of scones with egg white.
Meanwhile in small bowl stir together the topping ingredients. Sprinkle tops of the scones with the lemon sugar mixture.
Bake for 18 to 20 minutes or until very lightly browned.
Cool slightly. Serve.
